Use of the conductor in clical?

It seems to me that in many cases a conductor isn't necessary, as some pieces have been played MANY times by the performers (think beethoven's 5th, 9th, or mozart's 40th ) I mean, in jazz, what does the conductor do? "1, 2, 3, 4!" walks away and stands aside ...
